It’s National Vinegar Day!

Vinegar is made through a two-step fermentation process that starts with a carbohydrate-rich source.

  1. Alcoholic fermentation: Yeast breaks down sugars from fruits, or grains to produce alcohol and carbon dioxide.
  2. Acetification: Bacteria and oxygen transform the alcohol into acetic acid, which gives vinegar its sour taste.

The type of vinegar produced depends on the type of alcohol used and the fermentation process. For traditional vinegars, use a slow fermentation process that can take months, or a year to produce.

As far as the use for vinegar, it is used as a condiment and preservative in many cultures. It’s also an ingredient in sauces, marinades and dressings.
