IARN — As we mentioned yesterday, demand for beef has been as strong as ever in the U.S. after the pandemic, since many consumers wanted a meat that is versatile and easy to prepare. It’s been a similar story with U.S. beef exports, but other countries have been more interested in something we don’t eat as much: variety cuts. Cattlemen’s Beef Board CEO Greg Hanes said that, while we prefer standard cuts like steak and ground beef, the beef variety cuts have seen huge success overseas.
