Foodie Friday:
It’s National Rice Pudding Day! Rice pudding is a creamy mixture of rice and milk that is cooked until it’s thick and soft. It can be sweet, or savory. This raisin-studded desert is thickened with an egg, sweetened with sugar and enhanced with vanilla.
Here is how you make it:
- Cook the rice
- Cook the cooked rice, some of the milk, sugar and salt over medium heat until it is thick.
- Stir in the remaining milk, egg and raisins.
- Cook for two more minutes.
- Remove from the heat and stir in the butter and vanilla.
If you have any leftovers, let the pudding cool and then you can keep it in the fridge for up to three days. When you want to eat it again, reheat the rice pudding until it is piping hot on the stove, or in the microwave.
