It’s National Coq Au Vin Day!
Coq Au Vin is a French chicken stew that is known for its rich, wine-infused sauce and tender chicken.
Ingredients include: Bone-in chicken thighs, bacon, red wine, onions, carrots, mushrooms, thyme and a base of chicken broth.
To prepare you marinate the chicken in red wine then cook the bacon and saute the vegetables. Add the chicken and simmer until tender. This dish can be served with mashed potatoes, or polenta to soak up the sauce.
